French Cheese and Tomato Omelette
A rich, golden French breakfast classic in under ten minutes.
A fluffy, two-minute French omelette filled with melty cheese and sweet tomato slices, finished with fresh chives and served immediately.

- 2 large eggs
- 1 tsp fine cream
- 1 tbsp butter

Ingredients
- 2 large eggs
- 1 tsp fine cream
- 1 tbsp butter
- 1 medium tomato thinly sliced
- 50 g mature cheddar cheese grated
- 1 tbsp chives finely snipped
- freshly ground black pepper

Whisk the two eggs with the fine cream and a good grinding of black pepper in a bowl until fully combined and frothy.
Tip Adding cream makes the omelette slightly richer and easier to fold.

Place a 20cm non-stick pan over medium heat and swirl 1 tablespoon of butter around to coat the base and sides evenly.
Tip Wait until the butter is foaming and quiet before adding the eggs.

Pour in the egg mixture and let it sit for a minute, gently tilting the pan to spread the liquid evenly across the surface.

While the edges set but the center is still wet, sprinkle the sliced tomato and grated cheese over the top, covering one half of the omelette.

Slide a spatula under the empty side and gently fold it over the filled half, pressing lightly with the spatula to seal.
Tip Do not over-cook; the cheese should remain molten inside.

Turn the omelette out onto a warm plate, sprinkle over the snipped chives, and serve immediately.

Chef's tips
