Classic Toasted Cheese Sandwich
The definitive, dependable British comfort classic
A simple, high-contrast sandwich made with just three ingredients: rich, buttery bread and sharp, melted cheese. Toasted until golden and crispy, this is the ultimate fast and reliable lunchtime staple.
Shopping list
- 2 slices thick bread (sourdough or wholemeal)
- 20 g softened butter
- 60 g cheddar or mature cheddar cheese (grated or thick slices)
Ingredients
- 2 slices bread thick slices, preferably sourdough or wholemeal
- 20 g butter softened
- 60 g cheese cheddar or mature cheddar, grated or thick slices
Method
-
1 min
Place the two slices of bread on a clean cutting board. Use a sharp knife to cut the crusts off all four sides of each slice to create neat rectangles.
-
1 min
Take one slice of bread and spread a thin, even layer of the softened butter across the entire surface using a small knife.
-
1 min
Scatter the grated cheese or place the cheese slices evenly over the buttered surface. Use about half of your total amount of cheese.
-
Take the second slice of bread and place it directly on top of the cheese, forming a sandwich. Press down gently but firmly to ensure the cheese touches the bread.
-
1 min
Spread a thin layer of the remaining butter over the outer top surface of the upper slice of bread.
-
4 min
Place a dry, heavy-based frying pan or griddle on the hob over a medium heat. Once hot, add the sandwich and press down lightly with a spatula.
Tip A heavy pan helps distribute the heat evenly for golden, crispy toast.
-
4 min
Cook for 4 to 5 minutes without moving it. Flip the sandwich carefully and cook for another 4 to 5 minutes until the bread is golden brown and the cheese inside is fully melted.
Tip Resist the urge to open it early; give it the full time to ensure the cheese is gooey throughout.
-
2 min
Remove the sandwich from the pan and let it cool for 30 seconds. Cut it in half diagonally and serve immediately while the cheese is still molten.
Chef's tips
- Use a dry, non-stick frying pan to prevent the buttered bread from sticking.
- Do not use a lid unless the heat is very low, as steam will prevent the outside from toasting crisply.
- If the bread is browning too quickly, reduce the heat to medium-low to cook the cheese thoroughly without burning the crust.
Swap it
- Cheese
- Try using smoked gouda for a rich, savoury flavour, or Swiss cheese for a nutty melt that is slightly less sharp than cheddar.
- Bread
- Swap standard white or wholemeal bread for sourdough for a tangier crust, or use thick-cut ciabatta for a lighter, airier texture.
- Flavour boost
- Add a single, small slice of tomato between the bread and cheese to add acidity and moisture without making the sandwich soggy.
