  • 300 g basmati rice
  • 400 g mixed vegetables (cauliflower, green beans, carrots, peas)

  • 2 medium tomatoes
  • 3 tbsp ghee or butter
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1 tsp biryani spice mix (or garam masala)
  • 1/2 tsp chili powder
  • 3 green chilies
  • 1 cup fresh mint leaves
  • 2 tbsp fresh cilantro
  • a pinch of saffron strands
  • 1 cup raita for garnish

Ingredients

  • 300 g basmati rice rinsed and soaked for 20 minutes
  • 400 g mixed vegetables cauliflower, green beans, carrots, peas, diced
  • 2 large onions thinly sliced
  • 2 medium tomatoes diced
  • 3 tbsp ghee or butter
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1 tsp biryani spice mix or garam masala
  • 1/2 tsp chili powder
  • to taste salt
  • 3 green chilies slit
  • 1 cup mint leaves torn
  • 2 tbsp cilantro fresh
  • 4 cups water for cooking rice
  • a pinch saffron strands soaked in 2 tbsp warm milk
  • 1 cup frozen raita for garnish

Method

  1. Set up your work station with all vegetables chopped, spices measured, and rice soaked. Ensure your large pot with tight-fitting lid is ready beside the burner.

  2. Heat 2 tbsp ghee in a large pot over medium-high heat. Add mustard and cumin seeds, then add sliced onions and green chilies. Fry until onions turn deep golden brown, about 10 minutes, stirring constantly to prevent burning.

  3. Add tomatoes and sauté for 5 minutes until they soften. Stir in turmeric, biryani spice mix, chili powder, and salt. Cook for 1 minute to release the aroma of the spices.
