This is the definitive Greek salad featuring crisp cucumber, chunky tomatoes, and a generous slab of feta. It is fresh, easy to make, and completely gluten-free.

Shopping list

  • 1 large cucumber
  • 300 g ripe tomatoes
  • 1 small red onion
  • 60 g green olives
  • 125 g feta cheese
  • 45 ml extra-virgin olive oil
  • 1 tsp dried oregano

A classic mezedes-style plate that is as easy to make as it is to eat.

Ingredients

  • 1 large cucumber halved and thinly sliced
  • 300 g ripe tomatoes cut into chunks
  • 1 small red onion thinly sliced
  • 60 g green olives pitted
  • 125 g feta cheese broken into chunks
  • 3 tbsp extra-virgin olive oil
  • 1 tsp dried oregano finely ground

Method

  1. Slice the cucumber into thin half-moons and place them in a large serving bowl. This creates a crisp base for the salad.

    3 min
  2. Chop the tomatoes into rustic chunks and add them to the bowl with the cucumber. Mix them gently to distribute evenly.

Tip Keep the seeds in for maximum juiciness.

    3 min
  3. Thinly slice the red onion and add it to the bowl with the green olives. The sharpness of the onion balances the salty olives.

Tip Blanch the onion in hot water if you prefer a milder flavour.

    2 min
  4. Scatter the oregano over the vegetables and drizzle generously with the olive oil. Toss the salad until every piece is lightly coated.

Tip Use a wide spoon to toss without breaking the cucumber.

    2 min
  5. Lay the chunky pieces of feta cheese on top of the dressed vegetables. Serve immediately while the cheese is still firm and cool.

Tip Resist the urge to mix the feta into the bowl.

Chef's tips

  • Use a block of feta instead of pre-packaged slices for a richer flavour.
  • The salad tastes better if it is served chilled.
  • Add a small splash of red wine vinegar to the dressing if you like a sharper taste.

Swap it

Vegan Option
Use a high-quality plant-based feta substitute made from tofu or cashew nuts.
Texture Change
Swap the green olives for kalamata olives for a darker colour and a slightly sweeter taste.
Leafy Addition
Tear some crisp romaine lettuce and add it to the bowl for extra bulk and crunch.

Serve cold for the best texture.
