Golden Mutton Shepherd's Pie
A warm, comforting British classic with a golden crust.
A traditional mutton shepherd's pie with a rich vegetable and meat filling topped with fluffy, sage-flavoured mashed potato. It is deeply satisfying and perfect for cold evenings.
Shopping list
- 500 g mutton mince
- 50 g butter
- 1 medium onion
- 1 medium carrot
- 1 medium parsnip
- 150 g mushrooms
- 200 ml beef or mutton stock
- 1 tbsp tomato puree
- 1 tsp Worcestershire sauce
- 1 kg potatoes (floury variety like Maris Piper)
- 100 ml full fat milk
- 1 tsp dried sage
Ingredients
- 500 g Mutton mince Good quality
- 50 g Butter For cooking and topping
- 1 medium Onion Finely diced
- 1 medium Carrot Finely diced
- 1 medium Parsnip Finely diced
- 150 g Mushroom Finely chopped
- 200 ml Stock Beef or mutton
- 1 tbsp Tomato puree
- 1 tsp Worcestershire sauce
- 1 kg Potatoes Floury variety like Maris Piper
- 100 ml Milk Full fat
- 1 tsp Sage Dried

Peel and chop potatoes into small even cubes. Place in a large pot of salted boiling water and cook for 10-12 minutes until tender when pierced with a fork. Drain well.

Mash the cooked potatoes with half of the butter (30g) and the hot milk until smooth. Season with salt and pepper. Add the dried sage and mix well. Keep warm.
Tip Do not overwork the mash or it will become gluey.

Heat the remaining butter in a large saucepan. Add the chopped onion, carrot, parsnip and mushrooms. Cook over a medium heat for 5 minutes until softened, stirring occasionally.
Tip Do not brown the vegetables yet; you want them sweet and soft.

Add the mutton mince to the vegetables and increase the heat to high. Break up the meat with a wooden spoon until it is well scattered. Cook for another 5 minutes.
Tip Ensure no large clumps remain.

Stir in the stock, tomato puree and Worcestershire sauce. Bring to the boil and simmer for 3-4 minutes until slightly thickened. Season with salt and pepper. Pour into an oven-proof baking dish (approx 2L capacity).
Tip Make sure the liquid is not too runny or the pie will be soggy.

Spread the mashed potato evenly over the hot filling. Smooth the top, then use a fork to create a textured, ridged surface to catch the heat. Dab with the remaining butter.
Tip Make sure there are no gaps where the filling might bubble up.

Bake in a preheated oven at 200 C for 25-30 minutes, until the topping is golden brown and the filling is bubbling. Rest for 5 minutes before serving.
Tip Keep an eye on the last 5 minutes to prevent burning.
Timing

- Preheat oven to 200 C and start browning the mince.
- T-45 min
- Sauce is reduced; potato topping is being mashed.
- T-30 min
- Assembly complete and in the oven for 30 minutes.
Chef's tips
- If the mash is too stiff to spread, add a splash more warm milk.
- Use a glass or ceramic dish to monitor the browning of the top.
- Resting the pie for 5 minutes after baking helps it set and makes it easier to slice.
Swap it
- Lamb for Mutton
- Lamb mince is sweeter and more common; use the same method for a Beef Shepherd's Pie.
- Mushroom swap
- Use oyster mushrooms for a larger, meatier texture, or add a handful of peas for colour.
- Vegetable topping
- Swap the potato for a creamy cauliflower mash for a lighter, lower-carb version.
- Gluten-free gravy
- Thicken the sauce with cornflour mixed into a little cold stock, then add it to the pan to thicken.
