Beef Burgers with Chips
Grilled beef patties with golden wedges.
A classic American dinner with seasoned beef patties cooked in a cast-iron pan, served with home-style oven chips and toasted buns.
Shopping list
- 500 g ground beef
- 2 tbsp all-purpose flour
- 1 egg
- 1/2 small onion
- 1 tsp salt
- 1/2 tsp black pepper
- 3 tbsp breadcrumbs
- 1 tsp butter
- 4 sesame buns
- 4 medium potatoes
- 1 tbsp olive oil
Ingredients
- 500 g ground beef
- 2 tbsp all-purpose flour
- 1 eggs
- 1/2 small onion grated
- 1 tsp salt
- 1/2 tsp black pepper
- 3 tbsp breadcrumbs
- 1 tsp butter melted
- 4 buns sesame
- 4 medium potatoes washed and scrubbed

Grate the half onion into a large bowl. Add the 500 g ground beef, 2 tbsp flour, 1 egg, 1 tsp salt, and 1/2 tsp black pepper.

Mix everything with your hands or a fork until evenly combined. Do not overwork the meat to keep it tender.

Divide the mixture into 4 equal portions. Roll each into balls, then flatten into thick patties about 2 cm thick.
Tip Make a small indent in the center of each patty to prevent puffing up.

Heat a large grill pan or cast-iron skillet over medium-high heat. Brush with 1 tsp melted butter.

Place 2 patties in the pan. Cook for 3-4 minutes without moving them to get seared crust. Flip and cook 3-4 minutes more. Repeat with the other 2 patties.
Tip Internal temp should reach 71 C for medium.

While cooking the second batch, cut the 4 medium potatoes into thick wedges. Place in a bowl of cold water for 2 minutes to remove starch.

Preheat the oven broiler. Line a baking sheet with parchment paper. Arrange potato wedges in a single layer.
Tip Do not overcrowd the sheet.

Drizzle potatoes with 1 tbsp olive oil and season with 1/2 tsp salt. Toss to coat evenly.

Broil the potatoes for 10-12 minutes, turning halfway through, until golden and crispy on the edges. Set aside to cool slightly.

Toast the 4 sesame buns cut-side down in the empty skillet for 1 minute. Place a patty on each bun. Top with a potato wedge on the side.
Chef's tips
- Let the patties rest for 1 minute after cooking so the juices settle inside the meat.
- The onion adds moisture; avoid adding ice or water which can make the burger greasy.
- If your buns get soggy, lay them out on the counter while you finish cooking the other items.
Swap it
- Cheese
- Add a slice of American or cheddar to the patty for the final 30 seconds of cooking to melt it.
- Veggie patty
- Replace half the beef with crumbled cooked lentils or mushrooms for a lighter version.
- Gluten-free
- Swap the breadcrumbs for crushed nuts or gluten-free flour and use gluten-free buns.
- No potato
- Skip the potatoes and serve the burgers on a large plate with a fresh green salad.
