A quick mid-week dinner combining traditional flavors with easy-to-cook vegetables and tender chicken.

Shopping list

  • 2 tbsp Thai green curry paste
  • 400 ml full fat coconut milk
  • 400 g boneless skinless chicken thigh
  • 150 g snap peas
  • 1 red bell pepper
  • 2 tsp fish sauce
  • 1 tbsp palm sugar
  • 1/2 bunch Thai basil
  • 1 lime

Ingredients

  • 2 tbsp thai green curry paste
  • 400 ml coconut milk full fat
  • 400 g chicken thigh boneless and skinless, cut into bite-sized chunks
  • 150 g snap peas halved lengthwise
  • 1 red bell pepper sliced into strips
  • 2 tsp fish sauce
  • 1 tbsp palm sugar or dark brown sugar
  • 1/2 bunch thai basil leaves
  • 1 lime for juice and wedges to serve

Method

  1. Add the curry paste to the hot wok and fry for one minute until the raw garlic smell disappears and the fragrance rises. Stir constantly to prevent sticking.

  2. Pour in the canned coconut milk and bring to a gentle boil. Simmer for two minutes until the thick cream separates from the watery liquid at the top.

    Tip Using canned coconut milk ensures the correct fat content for the sauce.

  3. Add the chicken chunks and cook, turning frequently, until they are no longer pink in the centre. The coconut milk will reduce and become a lighter, silky consistency.

  4. Stir in the snap peas and red bell pepper. Cook for two minutes until the vegetables are just starting to soften but still retain a slight snap.

    Tip Keep the heat on high to ensure the vegetables crisp slightly rather than stew.

  5. Balance the sauce by adding the fish sauce and palm sugar. Taste the liquid; it should be sharp, salty, and slightly sweet, but not overly spicy.

  6. Remove the pan from the heat immediately and stir in the fresh thai basil leaves so they wilt but do not cook down.

  7. Squeeze half a lime over the serving bowls to brighten the fat. Serves four as a hot main dish.

Chef's tips

  • Fry the paste in hot oil before adding liquids to unlock the oils and reduce the raw taste.
  • Add half the basil at the end of the cooking and reserve a little to garnish the bowls.

Swap it

Protein
Substitute firm white fish, prawns, or firm tofu for the chicken; reduce cooking time to 3-4 minutes so the protein does not overcook.
Vegetables
Use asparagus tips, broccoli florets, or mushrooms instead of snap peas and bell pepper for an earthier texture.
Sweetener
Use a splash of water instead of sugar for a less sweet profile, or add more lime juice to compensate.
