One-Pot Aromatic Vegetable Biryani
Layered spices and steaming rice in one pot.
A rich and aromatic pot-burnt vegetable biryani that comes together in a single large pot with a sealed-dun methodology.
Shopping list
- 300 g basmati rice
- 400 g mixed vegetables (cauliflower, green beans, carrots, peas)
- 2 large onions
- 2 medium tomatoes
- 3 tbsp ghee or butter
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 tsp biryani spice mix (or garam masala)
- 1/2 tsp chili powder
- 3 green chilies
- 1 cup fresh mint leaves
- 2 tbsp fresh cilantro
- a pinch of saffron strands
- 1 cup raita for garnish

- 300 g basmati rice rinsed and soaked for 20 minutes
- 400 g mixed vegetables cauliflower, green beans, carrots, peas, diced
- 2 large onions thinly sliced
- 2 medium tomatoes diced
- 3 tbsp ghee or butter
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 tsp biryani spice mix or garam masala
- 1/2 tsp chili powder
- to taste salt
- 3 green chilies slit
- 1 cup mint leaves torn
- 2 tbsp cilantro fresh
- 4 cups water for cooking rice
- a pinch saffron strands soaked in 2 tbsp warm milk
- 1 cup frozen raita for garnish

Set up your work station with all vegetables chopped, spices measured, and rice soaked. Ensure your large pot with tight-fitting lid is ready beside the burner.

Heat 2 tbsp ghee in a large pot over medium-high heat. Add mustard and cumin seeds, then add sliced onions and green chilies. Fry until onions turn deep golden brown, about 10 minutes, stirring constantly to prevent burning.
Tip Golden onions are essential for flavor; do not rush this stage.

Add tomatoes and sauté for 5 minutes until they soften. Stir in turmeric, biryani spice mix, chili powder, and salt. Cook for 1 minute to release the aroma of the spices.

Add all vegetables and stir to coat them in the masala. Cook for 5 minutes until they just begin to soften but remain crisp. Season with a little more salt if needed.

Drain the soaked rice and add it gently to the pot. Mix carefully, ensuring rice grains stay intact and are evenly coated with the vegetable masala. Add 4 cups water.

Bring the water to a boil over high heat. Then immediately reduce to lowest possible heat. Place a flat plate or parchment paper over the pot, then secure the tight-fitting lid on top.
Tip The plate helps trap steam to seal the pot.

Cook on the lowest heat for 18-20 minutes. The rice will look slightly hard underneath but will finish steaming in the resting phase. Do not lift the lid during cooking.
Tip Watch the heat; high heat will burn the bottom.

Turn off the heat. Drizzle the saffron milk and top with fresh mint leaves and cilantro. Leave the pot sealed with the lid on for exactly 10 minutes to rest.

Uncover and gently fluff the biryani with a fork, starting from the edge. Mix the layers lightly so the saffron and mint aromas distribute evenly throughout the dish.
Chef's tips
- Always soak the basmati rice; this prevents it from breaking during the high-heat searing.
- Frying the onions until they are dark brown is non-negotiable for the authentic depth of flavor.
- Keep the flame on the lowest possible setting during the sealed cooking stage to avoid burning the base.
- Patience during the 10-minute resting period is what makes the rice grains distinct and moist.
