Ingredients

Method

  1. Slice the aubergines into 1 cm rounds, salt them generously, and rest for 20 minutes. Rinse the salt off and pat them dry thoroughly with kitchen paper to prevent sogginess.

    Tip The salting step removes the natural water and helps the aubergine brown rather than boil during the next step.

  2. Heat half the olive oil in a large pan over medium-high heat. Fry the aubergine slices in batches until golden and tender on both sides, about 4-5 minutes. Drain on paper towels.

  3. In a separate large bowl, mix the ground beef, onion, garlic, remaining olive oil, tomato puree, cinnamon, salt, and pepper. Brown the mixture until the meat is cooked through and the sauce is thick.
